१- पितली (काचो दाण)  मुगर्युं तैं सिलवट मा पीसिक मस्यट मा लूण मर्च मसालों मिलैक तवा या कढ़ाई मा रोट जन बणये जांद .
२- भिज्यां गौथ का मस्यट  से
३- भिजयाँ उड़द कु मस्यट से
बकै कबी कबी हौरी भिजयाँ  दालुं क मस्यट से बि पटुड़ी बणये जांद

जब अनाज या दाळऊँ तैं हिसरउन्द भुजे जाव त वै अनाज तैं बुखण बोल्दन.
मुख्य रूप से यूँ अनाज , तिलहन या दाळ  ऊँ से बुखण बणये जान्दन :
१- मुंगरी
२- ग्युं
३- मर्सू
४- जुंडळ
५- भट्ट
६- चणा
७- तिल
सट्टी   तैं बि  भुजे जांद पण वान्खूण चूड़ा  बुल्दन
बुखणु  मा भुज्याँ भ्न्गुल-तिल , अखोड़, गुड़ रळऐक  बुकये जांद .

Thichwani

Brief: Thichwani can be prepared using radish root (pahari mula having round root) or potatoes. The preparation is called by this name as the radish root or potato is never cut, but crushed (thinchao) into pieces.

 

Ingredients

   1. Radish root - 3 to 4
   2. Potato - 1
   3. Oil or Ghee - 2 tblsp
   4. Garlic - 4 to 5 cloves
   5. Ginger - 3 cm piece
   6. Onion-1 medium chopped
   7. Tomato- 1 medium and chopped
   8. Dry Faran or Cummin seeds - 1 tsp
   9. Red chillies whole - 4 to 5
  10. Asafoetida - a pinch
  11. Dry coriander powder - !/2 tsp
  12. Turmeric powder - 1/2 tsp
  13. Red chillies powder - 1/2 tsp
  14. Water - 6 cups
  15. Salt to taste

Method

   1. Wash and peal the radish and potatoes and crush them into small pieces. Crush also ginger and garlic.
   2. Heat oil in the frying pan on a moderate flame. Stir-fry crushed garlic and ginger in the hot oil. Add crushed radish and potato. Fry the mix for 2 to 3 minutes. Set aside.
   3. Add cummin seeds, red chillies, asafoetida in the remaining oil, add chopped onion and fry till light brown. Put turmeric powder, dry coriander powder, red chillies powder. Fry for few seconds. Add fried vegetable and chopped tomatoes and salt and some water.
   4. Boil for 2 to 3 minutes. Add remaining water and pressure cook or cook on a slow fire for about 30 minutes or till the radish becomes soft.
   5. Garnish with corriander leaves and green chillies (slit apart into two pieces).

Thanks for informing about Thinchvani . Customory my family cook Thinchvani every week in Mumbai .
I would like to add that thinchvani is not limitted to Raddish or poteto . But we may also prepare Thinchvani of Arbi (Pindalu) or hard fibrous fruit, bulb, shoot etc
In many cases, people prepare  Thinchvani of hard Raddish leaves/shoots, Chchinda, Gudadi (Torai), stems of Pindalu/Arbi too. Or in rainy season, when there is preparation of mixed Thinchvani of Raddish and Pindalu and unripped small Kaddu fruits  is also mixed through Theencna (Grinding ) process in raddish and Pindalu

बरसात मा भौत सि भुज्जी हुन्दन अर कैब्रि इन अवसर आंदो कि भौत सि भुज्ज्युं तैं मिलैक साग बणाण पड़दो .
अब जन कि धाण कर्द दें एकाद/द्वी चार  दाण पिंडालू क ल्ह़ाण पड़दू, द्वी चार पता खीरा क  तुड़ण पड़दन. एकाद मूल़ा क जळड़  उखाड़ ण पड़दन   आदि-आदि .
अर क्वी ज ण एकुलासी होऊ या भौत बडो परिवार बि ह्व़े सकद
त खीरा क पता , पिंडालू अर मूल़ा क पत्तों तै काटिक , मूला अर पिण्डालु क दाणु तैं  थीन्चिक , काची मुन्ग्र्युं तैं सिलवट मा  पीसिक आलण बणे क  तरीदार साग बणये जांद
अर सुखो साग बणाणे त बगैर आलण को सुखो साग बि बणदो . हाँ ज़रा मैणु मसाला मा भ्न्गुल  डालण नि भूलण चयांद

पुराणो गढ़वाळ  मा जब बजारून मा भुज्जी नि मिलदी छे त प्याज कु मौसम मा कुछ भुज्जी महत्वपुरण होंदी छे
अर जादातर रलौ मिसौ कि भुज्जी बणदी छे किलैकी पिज्वड़ मा जादा त प्याज ही लगये जांद छौ
त इन् भुज्जी  बणदा छ्या :
१- अल्लू अर  प्याज क पत्तों कि भुज्जी
२- मूल़ा  सुख्सा दगड़ प्याज क पत्तों कि भुज्जी
३- प्याज क पत्तों फाणु
४- प्याज पत्तों कु कपिलु/ पिटवणि
५- स्यूंचणा अर प्याज क पत्तों साग या सूखी भुज्जी
६- मटर, स्युंचणा , प्याज क पत्तों कि भुज्जी /साग
७- बौड़ी दगड़ प्याज क पत्तों कु साग
८- पिंडालुं दाणु दगड़ प्याज क पत्तों साग /सूखी भुज्जी
९- पलिंगु क  बनि बनिक साग/भुज्जी (जन प्याज क पत्तों उपयोग होंद  उन्नी पलिंगु क पत्तों उपयोग बि होंद )
१० अल्लू प्याज क दाणु भुज्जी /साग
११- अल्लू मटर या स्युंचणा साग /भुज्जी
१२- प्याज क पत्ता अर दाणु भुज्जी
१३- कचो प्याज मा लूण मर्च रलैक दगड़ मा रुट्टी खाण / भड़यूँ  प्याज कु दगड़ रुट्टी खाण

Kaafuli

 Ingredients
  Spinach (Palak ka saag) 2 bunches
Fenugreek leaves (Methi) optional 1/2 bunch
Green chillies 4 to 5
Oil 2 tbsp ( preferably mustard oil)
Garlic 4 to 5 cloves
Ginger a 3 cm piece
Cummin seeds 1 tsp
Asafoetida a pinch
Dry coriander powder 1/2 tsp
Turmeric powder 1/4 tsp
 
Rice powder or rice paste 1 tbsp
Curd- 2tbsp (optional)
Water 1-2 cup
Salt 2 tsp or to taste
Method

Wash Palak and Methi in running water.
After washing, chop and boil both vegetables along with green chillies in a little water till tender. Mash into a paste using a blender.
Finely chop ginger and garlic. Heat oil in a frying pan.
Add garlic and ginger in the hot oil. When the garlic turns light brown, add cummin seeds and asafoetida.
Add mashed vegetables, turmeric powder, dry coriander powder and salt.
Add required amount of water to Kafuli and bring to boil. Now add rice paste or rice powder dissolved in water. · Cover and cook for about 8 to 10 minutes on slow fire till the gravy is is   thick. If dry add some water and boil.
Garnish with pure ghee and serve hot with roti or steamed rice.
