देहरादून, जागरण संवाददाता: पहाड़ की प्रमुख फसलों में शुमार झंगोरा की खेती अब किसानों की आर्थिकी संवारने का अहम जरिया बनने जा रही है। न केवल टेस्ट बदलने, बल्कि पोषक तत्वों से भरपूर होने की वजह से झंगोरा का जादू महानगरों में भी लोगों के सिर चढ़कर बोल रहा है। सितारा होटलों, शादी-ब्याह समारोहों में झंगोरे की खीर पहली पसंद बन रही है। झंगोरा मधुमेह के रोगियों के लिए आदर्श आहार भी है। इसे देखते हुए जीबी पंत कृषि एवं प्रौद्योगिकी विवि ने इसकी ऐसी उन्नत प्रजाति विकसित की है, जिससे किसान सामान्य की तुलना में अधिक उत्पादन ले सकते हैं। राज्य के पर्वतीय क्षेत्र में उत्पादित होने वाले मोटे अनाजों में झंगोरा (ईकाईनोक्लोवा फ्रुमेनटेसिया) प्रमुख फसल रही है। एक दौर में झंगोरा का प्रयोग चावल के स्थान पर पकाकर खाने व खीर बनाने के साथ ही पशुओं को दिए जाने वाले दाने के रूप में होता था। बाद में विभिन्न कारणों के चलते किसान इस प्रमुख फसल से कटते चले गए, लेकिन अब स्थितियां बदली हैं। पौष्टिक गुणों से भरपूर झंगोरा की बीते एक दशक के दौरान बाजार में मांग बढ़ी है। पहाड़ी गांवों में घरों तक सीमित झंगोरे की खीर और छंछ्या को महानगरों में भी खूब पसंद किया जा रहा है। टेस्ट बदलने के साथ ही झंगोरा में मौजूद पोषक तत्व लोगों को आकर्षित कर रहे हैं। जीबी पंत कृषि एवं प्रौद्योगिकी विवि के वरिष्ठ वैज्ञानिक डा.विजय कुमार यादव के अनुसार झंगोरा के दानों में करीब 98 फीसदी रेशा पाया जाता है, इसके कारण झंगोरा मधुमेह रोगियों के लिए आदर्श है। डा.यादव ने बताया कि झंगोरा से बने भोज्य पदार्थो का क्लाइसेमिक इंडेक्स अत्यंत कम पाया गया है, जो मधुमेह रोगियों के रक्त में शर्करा की मात्रा नियंत्रित करने में उपयोगी है। इसमें पाया जाने वाला प्रोटीन व कैल्शियम लगभग चावल के बराबर है, लेकिन वसा, खनिज और लौह तत्व चावल की तुलना में अधिक हैं। उन्होंने बताया कि पंतनगर विवि ने झंगोरा की पीआरजे-1 नाम से उन्नत प्रजाति विकसित की है। इससे किसान सामान्य प्रजाति की तुलना में तीन-चौथाई अधिक उत्पादन ले सकते हैं। उन्होंने कहा कि किसान अब इसके व्यावसायिक उत्पादन में रुचि ले रहे हैं।

Jhangore ki Kheer



Ingredients

   1. hangora - 500 gms
   2. Sugar - 200 gms
   3. Milk - 2 Lts
   4. Cahewnuts - 50 gms
   5. Raisins - 50 gms
   6. Chironji - 100 gms
   7. Kewara essence - 2-3 drops.



Method

   1. Wash and soak Jhangora in water for 1 hour.
   2. Boil Milk.
   3. Add Jhangora and stir well to avoid lumps.
   4. Add sugar and cook till it done.
   5. Add kewara essence and mix well.
   6. Garnish with Raisins, Cashewnuts, and Chironji

Jholi (its a like youghuert sauce)




Ingredients


   1. Besan or Rice flour - 1 cup
   2. Curd - 3 cups
   3. Oil or Ghee - 1/2 cup
   4. Garlic - 4 to 5 cloves
   5. Dry Faran or Cummin seeds - 1 tsp
   6. Red chillies whole - 4 to 5
   7. Asafoetida - a pinch
   8. Dry coriander powder - !/2 tsp
   9. Turmeric powder - 1/2 tsp
  10. Red chillies powder - 1/2 tsp
  11. Water - 3 cups
  12. Salt - 3 tsp or to taste
  13. Chopped spinach or fenugreek leaves -optional


Method


   1. Jholi can be made of besan or rice flour. Mix besan, 1/4 tsp turmeric powder and 1/2 tsp salt. Make it into a thick paste by gradually adding water, and continuously folding it with a spatula or karchi.
   2. Now mix the paste with Curd and water. Churn the mixture well.
   3. Take a pan or karahi and heat the oil. Add garlic cloves in the hot oil. When the garlic turns light brown, faran, red chillies and heeng.
   4. Immediately pour the curd mix into the frying pan. Add turmeric powder, dry coriander powder, red chillies powder and salt.
   5. Cook till the gravy starts thickening and the raw smell of besan is gone. Let the jholi cook for about 10-15 minutes. If you are using rice flour then cook it for few minutes more. Add more water to keep the consistency thin.
   6. Before taking it off from heat, add handful of chopped spinach leaves or chopped spring onion leaves. Cook for few more minutes till the leaves are tender.
   7. Garnish with a table spoon full of ghee, coriander leaves and green chillies( slit apart into two pieces) and serve with bhaat (steamed rice).



tips from chef:  Jhol means very thin gravy. Jhol can be made out of tomatoes, potatoes and other tubers. On the other hand Jholi is gravy made out of curd. It is comparatively a much thicker jhol and similar to phanu in preparation.

SOOJI ka HALVA



 Ingredient

1 cup of semolina (Sooji)

10 cardamoms

1 cup sugar

2 cups water

5½ oz/150 g butter

pinch of salt

cashew nuts, raisins, almonds (according to taste) to decorate


Methods

      Melt the Ghee  in the pan.
    *
      Add the semolina and roast on a very low heat until it turns light brown and it gives a nice aroma.
    *
      Add water and let it absorb.
    *
      Add sugar, pinch of salt and stir gently for 5-7 minutes.
    *
      Finally, add nuts and take off the heat.
    *
      Pour in serving dishes. Decorate and serve immediately.

Kumaaoni style (bhaang ki chutney)



Ingredient
 Bhaang (Hemp) seeds- 1-2tbspCorriander leaves(optional)- 1/2 cupGreen chillies- 2-3 nos.Yoghurt- 1/2 cupor juice of lemon- 2-3 tb sp. Method 1. Roast bhaang seeds in a dry pan till they crackle.2. Grind together with dhaniya , green chillies, salt and yoghurt.3. In place of yoghurt, lemon juice can be used. Strain the chutney to remove the coarse covering of bhaang seeds. bhaang chutney , garnish with fried coriander leaf and mustard seeds, chutney is ready to eat

Phaanu

Phanu is also made of dals (lentils) like chainsoo, but in this case the dals are soaked in water for about 4 to 6 hours before its use. A different variety of dals like- Gahat, Arhar or green Mung can be used to prepare Phanu.



Ingredients

Gahat or Kulath (Horse gram) - 1 cup
Oil - 1/2 cup ( preferably mustard oil)
Garlic - 4 to 5 cloves
Ginger - 1/2 inch piece
Green chillies - 3 to 4
Jakhiya or Cummin seeds - 1 tsp
Asafoetida - a pinch
Dry coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Water - 3 cups
Salt - 2 tsp or to taste


Method:
1. Soak the Gahat daal in water overnight. If using Arhar daal, soak for 1-2hrs.

2. In the morning wash and rub the daal in running water so that it is free of seed covering (chilka). Then, grind it into a dry thick paste in a mixer or on a silbatta along with green chillies, garlic and ginger.

3. Place a tawa on a moderate flame. Put some oil and make thick pancakes ( like cutlets ) daal paste. Use only half of the paste for making the cakes.

4. Mix water with the remaining paste making it of pouring consistency. Heat oil in a pan and add jakhiya seeds and heeng. Now add Gahat paste, turmeric powder, dry coriander powder and salt.

5. Cover and cook for about 10 minutes on slow fire. Add the Gahat cakes to the gravy and continue simmer for another ten minutes. The gravy should have pouring consistency. If thick add some more water and heat till it boils.

Garnish with pure ghee and chopped coriander leaves . Serve with steamed rice.
